Liquid Gold

Broccoli Cheddar Soup with Mini Bread Bowls
The season for making soup is here! Nothing calls for cozy, belly-warming soup quite like a premature snow storm in October. Snowtober? Snoctober? Octosnow? ( Me and Mr. *From Scratch have way. too. much. time. on. our. hands. )

I'm so excited that this recipe crossed my path. Did you know that I have magical powers for finding recipes when I need them most? When I'm not even looking, a fabulous recipe always falls into my lap at the 11th hour, right when I'm starting to stress that I'm running out of blog posts. This has happened often enough, I can only conclude I have a magical power. Or maybe there are little recipe fairies working on my behalf. Or maybe I have an overactive imagination.



This week was no different, Broccoli Cheddar Soup with Mini Bread Bowls came at just the right time. So thank you little recipe fairies and culinary nymphs for working your magical powers and orchestrating our divine meeting.

These bread bowls are a fantastic "cheat," so-to-speak. I took store-bought dinner rolls out of the bakery section, carved them out, and toasted them up. They make delicious and edible bowls for my soup (with no dishes to wash later!). Why haven't I thought of this before? Enjoy!
Broccoli Cheddar Soup with Mini Bread Bowls
Cast of characters: onion, butter/margarine, condensed soup, milk, cheddar cheese, broccoli, dinner rolls.

Saute onion in a pot with butter or margarine. I decided to add a little carrot and celery to saute with the onions for added flavor. This is how my favorite restaurant does it (starts with 'P' and rhymes with 'Banera') and I know its really tasty. The little flecks of orange that the carrot add make an impresive final product.

Prep fresh broccoli to steam in the microwave, or you can microwave a bag of frozen broccoli.

Add 1 can or cream of chicken soup and 1 can of cheddar cheese soup. The original recipe calls for only cream of chicken soup, but many of the reviews said it wasn't cheesy enough. I was really happy with my results!

Add shredded cheddar cheese.

Add milk once cheese has melted.
Add steamed broccoli.

I took a couple ladles of the soup and but it in a blender  (My Magic Bullet!!) to puree it, then added it back to the pot. This step is not in the original recipe, but definitely worth it.



Carve out dinner rolls, brush with olive oil and bake on 375 degrees for 7-10 minutes.


Sprinkle more cheese in the bottom of the toasted bread bowls, it's like a buried treasure at the bottom of the soup!

  2. Thanks Carrie:-) I was surprised how easy it was to make with the condensed soup. And it's a lot cheaper (and probably healthier) that Panera.

  9. That snow storm was particularly strange, wasn't it? Part of me wanted so badly to be in NYC though! Broccoli and blue cheese is an absolute favorite of mine :)
