Do Rabbits (Frito)-Lay Eggs?

Nothing reminds me more of Easter Sunday than going to church in a new dress, Easter-egg hunts in the back yard, my husband in a pink bunny costume (pictures to prove it!), and family meals boasting spiral sliced ham with homemade macaroni and cheese. 


Living in Manhattan makes it challenging to recreate the holiday family gatherings that I grew up with because it's such a transient, bustling city. With people living in tiny apartments, subletting bedrooms and handling aggressive careers, take-out menus and delivery replace sit-down dinners and conversation. You'd be surprised how rare it is for some people to get a home-cooked meal at all. It is my self-appointed goal to change that, one person at a time:-)



Last year was my first attempt in the city to throw an Easter Meal and it was such a success. Since then, we've moved into an even bigger apartment and are hosting again this year for many beloved friends. I can't think of a better way to honor Jesus' new life than sharing life with others. It's a feast. It's Easter. It's a Feaster!

Homemade Mac n' Cheese with Potato-Chip Crust
Cast of Characters: Elbow macaroni, butter, Sharp Cheddar, evaporated milk, mustard, potato chips.
Melt butter in pan and add flour until dissolved.
Add a squirt of mustard. *Girl From Scratch Modification: Original recipe calls for powdered mustard, but I didn't have any and this worked out fine.
One can of evaporated milk. Not condensed milk. (found that one out the hard way!)
Salt and pepper and bring up to a boil.
Lower heat and add cheese. Sharp Cheddar is the best for this. 
Stir until cheese melts and sauce becomes velvety and smooth. Add cooked macaroni.
Coat evenly. I think I need a bigger pan! 
Put in baking dish and sprinkle more cheese.
Crumple up a bag of chips. Ok, so they're not Lays or anything, just the generic brand. *Girl From Scratch is also *Girl from Cheap-ville.
Sprinkle chips on top.
Bake at 350 degrees for 30 minutes.
Fresh out of the oven. Piping hot and golden brown.
A piece of heaven. Enjoy!
Once you make this for the first time are realize how easy it is to have macaroni and cheese from scratch, you'll never reach for a box again. It's just too good and too easy.

Bonus Recipe! I also made one with tomato slices, bread crumbs, and grated Parmesan cheese. Have fun with this recipe. Once you master the basics, play around with your favorite flavor-combinations. Bacon? Broccoli? White Cheddar? The rainbow of possibilities are endless, all of which lead to a delicious and cheesy pot of gold.

  6. Love it! We use canned stewed tomatoes for topping (after baked) and it's yum! I need to try your tomato slices - that looks amazing!!!
