Three Steps That'll Make Your Day

Flourless Chocolate Cake
1) Make this recipe.
2) Seriously. Make this recipe.
3) Then eat it.

With just 4 ingredients and less than an hour of prep and bake time, you can have this luscious and moist slice of heaven for yourself. I am shocked and amazed by how easy this recipe is and how impressive the finished product was. Pair its soft, crunchy texture and bittersweet chocolate flavor with a piping hot cup of coffee or a cold glass of milk. Your week will instantly show signs of improvement. Your kitchen will smell amazing. You will feel like a domestic virtuoso. You will be more popular (if word gets out that you have some of this cake). You will achieve world peace. It's chocolate-y, delicious, and even gluten-free!

I could stare at this forever. 
I brought this cake to the bistro where I work to share with the kitchen staff. I have some sort of latent maternal instinct to feed the people around me. I could tell they were all skeptical at first because they had never heard of a cake with no flour in it. They politely accepted my offer, but I could tell they thought this blonde waitress from Ohio had gone a little loco (they are all Hispanic)Sure enough, this recipe put huge smiles on the faces of two Dominicans, one Puerto Rican and one Argentinian. That's a slam dunk success in any language!

There is one (but only one) picky thing about this recipe: it requires a springform baking pan. A springform pan is the one where the sides come away from the bottom piece. I found my Pampered Chef one at a thrift store for 3 bucks. They are cheap and easy to find, even brand new. I found several inexpensive options at: Target, or Bed, Bath and Beyond, or Kmart. Don't let not having a springform pan stop you from making this recipe. It's worth the money to buy one because you will make this again and again. So the next time you're doing your grocery shopping or errands, pick one up! You're just 10 bucks away from chocolate nirvana.

                            Flourless Chocolate Cake
Cast of Characters: Sugar, chocolate chips, eggs, butter. Basically, the 4 food groups:-)
Put butter and chocolate chips in microwave safe bowl. Microwave for 30 second increments and stir until melted and smooth.
Separate 6 eggs. 

Beat egg-whites to soft peaks and gradually add sugar.
Add yolks to melted butter and chocolate. Stir until smooth and glisten-y.
Add egg-white mixture to yolk/chocolate mixture,
Fold together gently.
Pour into greased spring-form pan and bake for 40-55 minutes.
Let cool completely before taking out of the pan.
Garnish with powdered sugar and fresh raspberries or strawberries. Enjoy!

  6. This is what I LOVE about gluten free chocolate cakes and cupcakes - so few ingredients! I made some cupcakes a couple of months ago, and was pleasantly surprised at how quick and easy it was to make a "gluten free" dessert. I will certainly try this, as I happen to have all ingredients at home right now!

  10. I am making this cake for the second time tonight! It is so good. I baked it for company once and it was a huge hit. This time it's just for me and my husband to munch on all week :-) SO good.
