Hurrican't

Ham and Cheese Biscuits
Eyes have been glued to the television this week as the East Coast was slammed with stranger-than-strange weather. Earthquake tremors and a hurricane in 5 days, what gives Mother Earth? Don't be mad at me, I've started to compost.

Be assured that we Manhattan-ites remained unscathed even though days ago we prepared for the worst. Local stores nearly sold out of bottled water and flashlights. (If I have to hear the phrase "hunker-down" one more time...)

Me and Mr.*From Scratch stocked up on water and supplies nonchalantly throughout the week. It wasn't until Saturday afternoon that we started to get worried. By then the media and overall mood in the neighborhood was bordering on panic. We went back and forth to the grocery three more times for extra water. (In our defense, the media was saying be prepared for up to 5 days without power or water.)

We ended up hosting a slew of friends for a sleep-over. While some had to evacuate their apartments, others just wanted to hang out during the storm. Most of our guests were youthful singles in their early twenties who all happily volunteered to bring over food so I didn't have to cook. It's HI-larious what young-uns these days think is "emergency food." They brought over bags of tortilla chips, salsa (5 jars to be exact), Oreos, Doritos, ham, beer, wine and several bunches of bananas (obligatory fruit). We had a great night of Taboo, Die Hard 3, Food Network, and lots of tweeting. On a serious note, we are all truly thankful for everyone's prayers in keeping us safe from this potential disaster.


While some considered Oreos and Dr. Pepper to be appropriate breakfast items, my *Girl From Scratch palate didn't agree. Like a hurricane, I spun through my pantry, taking inventory. I had no breakfast cereal to serve, but an excess of Bisquick, and deli ham in the fridge. I made these Ham and Cheese Biscuits in the morning for the hungry masses. Voila! Easy and delicious. (I added more cheese in the second batch-- much tastier.) Enjoy!

Ham and Cheese Biscuits
Cast of Characters: Bisquick, deli ham, shredded cheese, oil, eggs, herbs. (left off the milk!)
Combine dry herbs with Bisquick.
Dice ham and add it and the cheese to dry ingredients.
Add wet ingredients (milk, egg, oil) to the rest.
Combine and lightly knead.
Place on greased cookie sheet and bake at 425 degrees for 10-12 minutes. I used the drop-biscuit method, but the real recipe calls for you to roll out dough and use biscuit cutter.
A perfect, portable and penny-conscious post-hurricane breakfast.

My husband actually said "Well, it's time to batten down the hatches," when it started to rain. I don't even know what that means. I'm sorry, did I marry Pa from Little House on the Prairie? Goodnight Irene.
